A Side of Pico, Please

So I'm a big fan of mexican food.... especially since my wife and I got together. She's from the San Diego area, and there's lots of GREAT mexican food down there. Anyways... there is this great mexican restaurant in my town called Taco Express. I know it doesn't sound particularly authentic... but trust me... IT IS!

They make the most amazing pico de gallo salsa.....

(I didn't have a real picture of it, but this is the closest I could find....)

So, it's basically the freshest, chunkiest salsa you could imagine... SO GOOD! They even know my face when I come in.... "Two fish tacos and a side of pico?" they ask....... The answer is always YES. :)

However, I went there today, the recipe had changed. What gives? I've tried making this stuff 3 or 4 times at home.... and just when I get close, they change the recipe?! I miss the old pico, Taco Express!

I'm 100% Mexican, who is alergic to 99% of spicy food. I'm not joking. They found out when I was little and started chocking with any food my mom made. I went to the doctor, did some tests, and I'm alergic to a chemical that's present is most spicy food.

Just throwing that out there so you can point and laugh (as most people do). Actually, I heard the best explination once, "And who said God doesen't have a sense of humor?"

You're making me miss Mexico. I went there on a mission trip in January.. theres like a different taco place every 2 or 3 buisnesses.. in the little towns (don't go to the tourist places, thats not REAL Mexico).. and they are all ethnic of course. There is pretty much no such thing as ground beef in tacos down there. I saw fish tacos, chicken tacos, fish and chicken tacos, steak tacos (The BEST!). Tacos with cheese melted on the tortilla.. and SO MANY different kinds of salsas and sauses, of course i never knew what was in any of them because the owners spoke very little english. I never want to see another tortilla again.. you eat them with EVERY meal! :P but i do miss Mexico and all of its ethnicity. :) The place I went to was only like 3 hours from San Diego (we drove the whole way from Saskatchewan Canada..). We sang Lets Dance for the little children at the work site and they laughed at us (variety of reasons probably)
